Laura Marano’s veggie wraps are quick, filling and an easy way to eat a variety of colors, which is a great way to ensure you’re getting important vitamins and minerals your body needs. Get your Meatless Monday off to a healthy start with these for lunch or dinner!

Serves 4


4 large flour tortillas (try spinach or sun-dried tomato for some color!)
1 bag of your choice: pre-washed lettuce or spinach
Your favorite veggies, washed and sliced or shredded, i.e. mushrooms, carrots, celery, radishes, tomatoes, corn, beets, zucchini, artichoke hearts, etc.
1 tub of your favorite hummus
1 package Tofurky deli slices, optional

Spread a layer of hummus on each tortilla up to 1 inch from the edges. If using Tofurky slices, spread a layer over the hummus. Sprinkle your veggies on top. Roll up. Enjoy!

Tip: For an even easier recipe, pick up a small salad bar to-go box from your favorite grocery store and fill it with your choice of cut veggies!

This is a great snack to make ahead of time. I usually make 3-4 wraps (using all the hummus and all the veggies) at a time and wrap the extras up for long days on the set. That way when I get the munchies these healthy wraps are waiting for me.
